Our partner and only one supplier since 1985: Cosaro, San Tomio di Malo (Vi). Bare-necked chickens for the whole chicken, Broiler breed for the cuts, guinea fowl, pullets and capons, bred for seven months and available only during the Christmas period. All reared between the Veneto Pedemontana and the Asiago Plateau, in small low-density farms, where the animals are free to run outdoors and able to feed themselves naturally on a fully-vegetable diet with a rich component of corn.
Firm meat with a golden yellow color, proof of a significant presence of carotenoid-rich corn in the daily diet. Lower minimum weight in cooking. Sophisticated and elegant flavor. Meat with an intense and herbaceous aroma, very satisfying
